Winter Warmer Soup
This soup is quick to prepare, but make sure you have a couple of hours to really let it cook properly, and let the flavours come together. I use a stove top but it could just as easily be done in a slow cooker. This is popular with the whole family, and gets a few extra serves of veggies in, so win-win - enjoy!
You will need:
2 brown onions, chopped
4 cloves garlic, chopped
2-3 good lugs of olive oil
2 cups of green split peas, rinsed
1/2 cup of white quinoa
2 potatoes, peeled and cut into cubes
1 small sweet potato, peeled and cut into cubes
1 Teaspoon of dried oregano (or small handful of fresh oregano)
1.5 litres of vegetable stock or water
Method:
- Place the chopped onions, garlic and olive oil in a deep saucepan and cook gently until the onions are soft.
- Add the potato, sweet potato, oregano, green split peas and quinoa and give it all a good stir.
- Pour in the vegetable stock (or water) and bring to the boil.
- Turn the heat down to a simmer and cook gently for around two hours, or until the peas are all muchy and soft!
- You're done! Serve it with a generous sprinkle of salt, buttered toast and freshly chopped oregano. Enjoy!
